Banana Muffins

This recipe has been in my family for over 30 years! I kid you not! It is honestly the best recipe I have ever had and I highly recommend you trying them today.

These banana muffins are light, fluffy and moist, not your typical dense muffin.  They’re also easy to make, one bowl for everything, you just can’t go wrong.

This is literally all the ingredients needed

Look how simple the ingredients are for this one, you really cannot mess this up.

Firstly, you cream the butter and the sugar together:

You then beat in the eggs one at a time:

Throw the dry ingredients in:

Lastly add the mashed bananas:

The bananas need to be really ripe

You can then add walnuts and/or raisins but we prefer them without.

As you can see this all happened in one bowl with a spatula.

We do love muffin form banana bread but loaves are good too, use an ice-cream scoop to evenly portion out your mixture

You can make these into muffins like I did or into a loaf pan, whatever your preference is, but make them!  They’re honestly really good.

Melt a little butter and mix in some sugar and cinnamon for the topping (don’t do like me and my picture melt the butter first).

There you have it delicious, fluffy, light, not too sweet banana muffins, adding butter is optional of course and totally not needed!

Recipe:

Ingredients:

½ cup unsalted butter

1 cup sugar

2 eggs

2 cups flour

1 teaspoon baking soda

½ teaspoon salt

3 large or 4 small ripe bananas, mashed

Optional:

1 cup (chopped walnuts)

¾ cup raisins

Topping ingredients:

1 tablespoon melted unsalted butter

1 tablespoon sugar

½ teaspoon ground cinnamon

Method:

  1. Cream butter and sugar;
  2. Beat in the eggs, one at a time;
  3. Combine the flour, baking soda and salt;
  4. Beat in the mashed bananas;
  5. Mix in the walnuts and raisins (if you choose);
  6. Pour into a grease loaf pan or into cupcake wrappers;
  7. Bake at 350° for 50-60 minutes. Test with inserting a knife into the bread, when the knife comes out clean the bread is done;
  8. Remove bread from pan onto cooling rack;
  9. For topping, melt butter and add sugar and cinnamon;
  10. While bread is warm brush the topping onto the top of the bread;
  11. Slice and enjoy! Adding some salted butter makes it even better!
